Orange — it’s not just for pumpkins anymore.
Sweet potatoes, carrots, butternut squash and sweet orange peppers are all powerful beta-carotene vegetables. In fact, it’s that healthy beta carotene that gives them their wonderful orange color. Yes, pumpkins, too.
